The Spice Journal, saffron, art 1

 

It seems appropriate to start the spice journal talking about the most expensive spice in the world : saffron! The spice originates from the flower crocus sativus or the saffron crocus. Each flower produces only three threads or stigma for harvesting by hand.The plant is very delicate and blooms for only one week of the year and must be harvested mid-morning when the flowers are still closed to protect the delicate stigmas. Such labour intensive harvesting produces a very expensive spice!
